Mmm....your meal sounds delicious! I'll definitely give those roasted carrots a try. For me, holy grail of carrots starts with finding a farmer who grows and harvests them "down in the fall." As the weather cools, carrots and other root veggies convert natural starches to sugar. You'll never find a sweeter option. Coincidentally, I wrote about kitchen failures and provenance this week. This is a nice, all purpose, tahini recipe I've used (including variations at the end): https://www.loveandlemons.com/tahini-sauce/. Mostly, I just use it to make hummus. Need to get back to that habit. I've been buying store bought and it's not even close to the same.
