I would like to add a photo here of a tinned fish shop in Les Sables d’Olonne on the French Bay of Biscay. Alas, technology has me confounded.
I will instead tell that one of my favourite snacks is sardines in tomato sauce served on rye crispbread. The soft fish goes so well with the strong crunchy cracker which is thick enough to not get soggy with the tomato sauce. I think my
body tells me I need the omega 3s and the calcium from the fishbones.
Sardines, done right, are such a pleasure . Years back in Brighton UK there was a wee but always madly busy tea shop known as the Mock Turtle. Tiny Georgian rooms, narrowest of stairs both up and down and the impossibly minuscule kitchen. Out of that kitchen came the most delectable cakes, vast toasty and chewy meringues with fresh cream in many flavours. Generous helpings balanced on delicate mix and match old china. Amongst the delicious plates of scrambled eggs, Benedict or Welsh Rarebit was something called a Sardinato.
The Sardinato.
A thick slice of homemade white bread toasted and buttered, overlayed with a generous pile of just perfectly squished sardines seasoned with cracked black pepper & mixed with fine chopped parsley. The finale being a generous layer of good sized tasty fresh sliced tomatoes all grilled finished with a lemon wedge on the side. The toast soaks up the unctuous oils almost semi caramelised by the grilling process. Nothing has ever surpassed it even remotely and have lived in many lovely European spots. Enjoy those sardines .
Ah the Sardinato. I can taste it now. Such vivid details, especially the buttered white bread toast. There is something about butter and tinned fish that works. In addition to sardines I bought a special tin of tuna packed in butter. I was told to warm the tin gently in hot water, then spoon the buttery fish onto toast. I will serve it in my Georgian style home, on china and think of the Mock Turtle. Thank you Inky.
