Isn't it strange that I'm not at all a foodie, am not particularly mad on cooking and yet I always find such lovely recipes on Substack that I have to try!
I was already familiar with the scones, being an Australian and knee deep in old CWA recipes.
And I'd just taken out my own batch of choc-chip cookies from the oven, ready for the family tomorrow.
OMG, thank you. A southerner from N. America, I will absolutely be trying the biscuit recipe, though I'll have to do a bit of research for where to find 00 flour. Good to know that cake flour will do in a pinch. Have you ever held them in the freezer for longer than a day?
As for the feta goodness, I'm on a mission to replicate a jar of pickled (I'd call them marinated) mushrooms I bought at the farmers market today. Based on ingredients and ethnicity of the producer, I'm going to use this as a starting point. https://www.thespruceeats.com/russian-pickled-mushrooms-recipe-1137315
you're welcome! I think biscuit recipes can be tough because flour is so different wherever we go, so maybe this Italian OO is the answer, finally a constant? I found it in the 'natural' section of the grocery store, and I know our local Italian grocery stocks it... hopefully you'll have similar luck. Good luck with the mushrooms, that recipe looks so good. x
Hi Tillie, thank you! I've linked to the biscuit and cookie recipes in the post (where they are underlined) but if you want my aunt susan's recipe (regular flour, straighforward!) I'd be happy to share.
I sooo identify with this Lindsay. In all the ways, needing a carrot, getting side tracked imagine what my carrot is, forgetting...remembering (hopefully), and feta!! If you ever make your way to Melbourne I’m going to take you to a dairy that only does marinated feta!! Amongst other culinary destinations x Oh and thank you for the mention😘

PS - I think you could freeze them for several days, or even half the recipe if you don't want to bake them all at once. Give it a try?

I’m an evening gym-goer but your description of the early morning is so lovely it’s tempting me to switch…
especially if there are cookies and coffee at home... give it a try :)
Love your substack. Please send your recipes for biscuit and cookies
