I love poached eggs but dislike the added flavor of the vinegar. so I have switched to making what I guess is technically coddled eggs - very soft eggs cooked in little buttered cups set in the hot water

I know what you mean about the vinegar - I used rice vinegar because that's what I had, and it seemed to work just as well without the bite.

Like you, what I think of as a poached egg is really coddled. My mother cooked ours in a small Teflon-coated gizmo, four at a time, then served them on what must have been Wonder Bread.

I need to revisit the whole scene. Maybe that'll be dinner one night this week.

haha! My mom really doesn't love them, unless they are teetering on the line between raw and runny. I am in a sweat while making them! At times like that it's probably best to just scramble :)
